In Bruno Mars's Version, the guy complements the girl that she is beautiful to him. But she doesn't believe him. So he tells she really beautiful and ask her not to change the way her looks.
In Billy Joel's Version, the girl the singer is referring to wants to change her looks to please her lover probably because she thinks he doesn't love her anyone. But the guy tells her that no matter how much she change, he will always take her by being herself.

To me, I think I like the Billy Joel's Version better for the reason that it represents a strong relation between the two couple (to be together for better or for worst), which make it more romantic to me. The Bruno Mars's Version is okay too but it's better to sing this when you're dating a girl and you want to flatter her. Some wise, the Billy Joel's Version could be sang to you're fiance or to your wife because of its deeper meaning.
